I’ve had a papaya ripening on my kitchen counter for a week now, and it was time to use it up. This smoothie tastes like a creamsicle and has a gorgeous orange colour. Make sure you get a really smooth consistency. It’s so good!
Makes 2 large or 4 small servings
1 small papaya
1 Tbsp peanut butter
1/2 tsp vanilla extract
1 cup young coconut meat
1 cup almond milk
1 cup filtered water
Blend all ingredients in high-speed blender, add more water if you like a lighter consistency. Enjoy!
