Tapioca and Coconut Milk Dessert

My mom used to make us this dessert which she got from an Asian restaurant we went to once. It’s such a comforting dessert to me and hits my sweet cravings. She puts sweet potatoes or yam chunks in it as well, but I didn’t have any on hand, so I left it out.

4 cups filtered water

1/2 cup tapioca pearls

3/4 cups demerara sugar

1 1/2 cups coconut milk

1/2 cup young coconut meat, finely chopped

Combine the water, tapioca, and sugar in a pan and let boil for 15-18 minutes (depends on the size of the tapioca, so check the package instructions). The tapioca should become transparent. Take the pan off the heat and add the coconut milk and meat. That’s it! It is SO good–enjoy it!

  1. Oh my goodness this reminds me of the vegan tapioca desserts they’d carry in my local health food store in Hawaii! I was just a little kid but I remember they had flavors (in addition to regular coconut) like passion fruit (lilikoi), pineapple, mango etc. I loved this stuff so much! Can’t wait to make some myself..
