‘Chicken’ and Coleslaw Burgers

This is such a great lunch or dinner idea adapted from a chicken recipe I found in a magazine (In Style??) and I made it vegan. I was so excited to eat it 2 nights in a row that I forgot to take a picture of it. Twice!


1/4 cup mayonnaise (I used the egg-free version)

1 tbsp cider vinegar

1 tsp xylitol

4 cups shredded red cabbage

1/2 apple, cored and chopped

1/4 cup chopped walnuts

salt and peeper to taste


Chick’n filets

5 whole wheat burger buns

Hot sauce

Combine the ingredients for the coleslaw and set aside. Grill the Chick’n Filets as per package instructions. Toast the burger buns. To serve, add some hot sauce and coleslaw to your buns, along with a filets. So good!
