I started off my day with some Basic Sprouted Oatmeal from Ani Phyo’s Raw Food Essentials. I couldn’t believe how tasty it turned out! She offers variations–I tried the variation with dates, vanilla extract, and almonds. Just yum!
Gave me energy for my long day of writing–I’m submitting my dissertation proposal to the university research ethics board next week, so it’s crunch time.
Later had an appointment with the dermatologist–worst experience ever! Abrupt and rude doctor, had no time to ask any questions, and she was seriously offended that I did not follow her advice from a previous appointment. I didn’t use a cream she prescribed because it had cortisone in it, which I found out once I tried to get the prescription filled. If she had given me time to ask a question, I would have asked her what the prescription was and would have told her I’m not putting cortisone on my skin. Anyways, I’m pretty quick to snap back, but I just couldn’t understand her reaction, I simply brushed it off. Clearly, I’m changing doctors tomorrow! Has anyone experienced this before?
Now I’m trying to shake this negativity off of me–craving a warm and comforting soup. I had some yams from my weekly organic basket delivery and found a yam soup recipe. I made some changes to the original recipe–hope you enjoy it!
- 3 1/2 cups vegetable or chicken broth (you may need to add more if the rice sucks up all the liquid)
- 2 1/2 tsp curry powder
- 1/2 tsp Celtic sea salt (depends if your broth is seasoned well or not)
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 tsp red pepper flakes
- 1 1/2 lb yams, peeled and diced
- 2 small onions, diced
- 1/3 cup brown basmati rice
Combine broth, curry powder, salt, black pepper, garlic powder, and red pepper flakes in a medium saucepan and being to a boil. Add yams, onions, and rice and simmer over low heat for 40 minutes. That’s it! Yum…
