Convenience has been really important since Baby Boy was born. I used to be relatively strict about making meals from scratch and not paying extra for having vegetables prepped for me. But that’s changed. Babies do that, don’t they.
I now get some help by buying pre-cut and pre-washed veggies like kale, broccoli, shredded carrots, and rutabaga. Today’s recipe uses some prepared veggies to help out a bit, with others I prepped myself. It does make a difference in terms of the time it takes me to get dinner ready. And when Baby Boy is happily playing in his exer-saucer, I need to hurry before it all goes downhill!
This dish keeps well in the fridge for a few days, and you can just reheat it when needed. We are all under the weather this week, so it helps to have a few meals already prepared and ready to go. Hope you enjoy it!
